It was so rainy the other day that I just had to make my "famous" but not so famous sweet potato chili. I really only say it's famous because my husband loves it. Anywho, there is nothing more satisfying than slow cooking on a gloomy, rainy day. I had all the ingredients for this AHHH-mazing chili and I thought, why not share it with all of my favorite friends?!
It is paleo and full of healthy ingredients, which is my fav when making any recipe! I add lots of vegetables and sweet potato but you can definitely change it up if you don't prefer some of it.
Note that I have also made this in my Instant Pot! Use the sauté setting and then once you are ready to add liquids, switch over to slow cooker or pressure cook! I slow cook on HIGH for three hours or pressure cook for 30 minutes.
